  1. 2 large spaghetti squash, halved and seeded
  2. 2 cups heavy whipping cream
  3. 1 cup chicken stock
  4. Salt and pepper*
  5. 2 cups four-cheese blend, shredded
  6. 6 cloves garlic, minced
  7. 4 cups chicken, cooked and shredded
  8. 4 cups broccoli, steamed and chopped
  9. Fresh thyme

Salt and pepper

Large oven proof roasting pan


  1. Heat the oven to 400 degrees
  2. Cut top off squash and halve, length-wise
  3. Spoon out seeds and discard
  4. In a large bowl, combine garlic, cream and chicken stock. Add sprinkle of fresh thyme
  5. Sprinkle salt and pepper over cavities of squash
  6. Sprinkle half the cheese over cavities
  7. Pour cream mixture into squash cavities
  8. Top with remaining Cheese and place into oven for 40-45 minutes. For last two minutes of cooking time, turn the oven to broil.
  9. While squash is roasting, prepare chicken and broccoli
  10. Remove squash from oven and begin pulling strands from skin and mixing the cream and cheese together. Top with broccoli and chicken, combining to mix. Serve and enjoy!
