Ingredients:
(Ingredients and measurements subject to availability)
Pasta Alfredo:

  1. 1 cup sour cream
  2. 1 cup ricotta cheese
  3. 15oz cup alfredo sauce
  4. 1/4 teaspoon salt*
  5. 1/4 teaspoon pepper*
  6. 3 tablespoons prepared pesto sauce
  7. 1 pound cooked rigatoni pasta
  8. 2 tablespoons melted butter
  9. 1 1/2 cup parmesan cheese
  10. chopped fresh basil for garnish
  11. cooking spray*

 Zucchini Casserole:

  1. 1 cup diced onion
  2. 2 tablespoons olive oil*, divided
  3. 4 cups sliced zucchini
  4. 3/4 cup grated Parmesan cheese
  5. 4 eggs, beaten
  6. 1/4 cup dry breadcrumbs
  7. 2 tablespoons melted butter

 *Not provided:
Salt and pepper
Cooking spray
Olive Oil
Equipment:
Springform pan or any baking pan

Instructions:
Pasta Alfredo:

  1. Heat oven to 400 degrees.
  2. Spray all sides of the baking pan with cooking spray.
  3. In a large bowl, whisk together the first 6 ingredients (sour cream, ricotta, alfredo, salt, pepper, pesto)
  4. In another large bowl, combine the cooked rigatoni with melted butter and 2 tablespoons of the parmesan.
  5. Stand the rigatoni up lengthwise, and line the pan until the whole pan is full of the rigatoni. Squeeze them in tight to get all pasta in the pan.
  6. Carefully pour the alfredo mixture on top of the noodles.
  7. Cook until brown and bubbly, for 25-30 minutes.
  8. Let the pan rest for 10 minutes before removing the pan.
  9. Garnish with fresh basil.

 Zucchini Casserole:

  1. Preheat the oven to 350 degrees.
  2. In a skillet, saute the onions in 1 tablespoon of the olive oil.
  3. Grease an 8x8 baking dish (or whatever you have on hand) with the remaining 1 tablespoon olive oil. Add the zucchini and sautéed onions in layers.
  4. Sprinkle with cheese. Pour the beaten eggs over the cheese. Top with breadcrumbs. Drizzle butter on top.
  5. Bake 50 minutes.
