Ingredients:
Strata:
  1. 2 cloves garlic, minced
  2. 1 cup mushrooms, sliced
  3. 6 oz. spinach, chopped
  4. 6 cups focaccia bread (or other soft, fresh loaf), cut into .5”chunks
  5. 1 can artichoke hearts, cut into fourths
  6. 1/4 cup kalamata olives, sliced
  7. ¼ cup sun dried tomatoes, chopped
  8. ¼ cup parmesan cheese
  9. 4 oz. fat free mozzarella cheese
  10. 4 oz. fat free feta
  11. 32 oz container of egg whites
  12. 1 cup fat free half and half
  13. ½ cup plain greek yogurt
  14. ¼ cup basil leaves, chopped
  15. 2 tsp. paprika
  16. *2 tsp. black pepper
  17. *Salt
Breakfast Bar: 
  1. 2 cups quick oats
  2. ½ cup egg whites
  3. Cinnamon
  4. 2 tbsp brown sugar
  5. Two ripe bananas
  6. Chocolate chips
  7. *1 tsp vanilla (optional)
  8. *Sea Salt

Salt
Black Pepper
Cooking spray
Sea Salt

Equipment:
Glass dish
2 mixing bowls
Whisk

Instructions:
Strata:

  1. Heat oven to 375
  2. Prepare glass baking dish
  3. Cut focaccia into ½ in chunks and set aside
  4. In a large bowl, whisk together half and half, egg whites, paprika, greek yogurt, salt and pepper
  5. In another large bowl, combine all vegetables and cheeses; mix well
  6. Stir liquid mixture in with vegetables
  7. Place focaccia into prepared glass dish and pour vegetable and egg mixture on top, making sure to spread evenly
  8. Place in oven and bake for 35 minutes or until set
  9. Top with more cheese, basil and salt and pepper to taste, let set and cut into squares

    Breakfast Bar: 

    1. Mix together mashed bananas, vanilla (optional), brown sugar
    2. Add cinnamon, sea salt and oats
    3. Add in chocolate chips
    4. In prepared pan, spread mixture evenly and pour egg whites on top, making sure to cover all batter
    5. Bake at 375 for for 10 minutes or until set
    6. Remove and top with sea salt
    7. Allow to cool and cut into squares
